With peaches and tomatoes in season, salad is healthy, easy and delicious, with great visual appeal. Use your favorite oil and vinegar combination. I used blood orange olive oil and tangerine balsamic from The Olive Oil Shops in Lake Geneva.
Peaches And Tomato Summer Salad
4 organic peaches cut into slices
5-6 small tomatoes cut into wedges
1/2 red onion sliced thin
8 basil leaves ripped in small pieces
1/4 cup balsamic vinegar
3/4 cup olive oil
Combine first 4 ingredients in a bowl. In a separate bowl, whisk oil and vinegar together and add to peaches and tomatoes. Mix and serve.
