Healthy brownies? Count me in!

Speaking of Brownies, my daughter is one. Last week her Girl Scout Brownie troop participated in a healthy cooking demo at the HyVee in Sycamore with a registered dietitian. One of the recipes that they made was a black bean brownie.

I have substituted applesauce for fat in baked goods before, but have never tried using black beans. The beans replace the oil and egg that are typically added to the brownie mix. The idea is that the beans will provide the moisture to the brownies that the fat normally would, but will be lower in fat and calories, and higher in protein and fiber.

Healthy brownies? Count me in!   

Tonight my girls and I will be making the following recipe at home and I will tell you how it turns out later in the week.
