At this time tomatoes are really coming into their own. When we think of tomatoes we often think of Italian cooking, however the Italians didn't have tomatoes until about 150 years ago. Tomatoes came to Italy from the Americas, particularly Mexico and Central America.
I'm no different than many of you readers in that I love tomatoes in so many, many different forms. Rich tomato sauce, fresh tomatoes in many different types of salads, stewed tomatoes in certain casseroles, just the thought of all these dishes begins to get me hungry.
Nutritionally tomatoes are high in vitamins A, C and K, and they have a great deal of other vitamins and minerals in smaller amounts. Isn't it just great that something that looks so good, and taste so good, is also so good for you.
As I mentioned above when we think of tomatoes we think of eating them fresh or in a rich tomato sauce. There are many preparations, however, we are unfamiliar with. The recipe I have today calls for stir fried tomatoes. I thought this rather unique and wanted to be able to share this with you at this time of the growing season. This dish would be good for breakfast, lunch or dinner.
Stir Fried Tomatoes with Leeks and Eggs
4 Tbl canola oil
1 leek, washed and chopped
3 cloves garlic, thinly sliced
2 medium tomatoes, cored and cut into wedges
1 tsp sugar
1/2 tsp kosher salt, (or 1/4 tsp table salt)
1 green onion, chopped
Crack eggs into a medium bowl and beat lightly with a fork, set aside.
Heat a 14 inch wok or stainless steel skillet over high heat. Add 1 tablespoon of canola oil and swirl to coat the bottom and sides. Pour in eggs. Cook, stirring once or twice with spoon to break eggs into large curds, until eggs are fluffy, but not browned, about 60 seconds.
Immediately transfer eggs to plate and set aside. Return walk to high heat and add remaining oil, swirl to coat. Add leeks and cook stirring constantly for about one minute, add garlic and tomatoes and cook stirring constantly for another minute. Add sugar and eggs and cook for one more minute. Remove to plate and garnish with salt and green onions. Optionally, you can add some fresh chopped basil as a garnish. Enjoy!
