Recipe of the Week: Chicken Tetrazzini

1 12 ounce jar sliced mushrooms, drained

2 cups sour cream

2 cans undiluted cream of chicken soup

1/3 cup dry sherry

1 teaspoon dried thyme

1 teaspoon salt

1/4 teaspoon pepper

1 jar diced pimentos, drained

1/2 green pepper chopped

4 cooked chicken breasts, diced (poached or leftover chicken works)

1/3 16 ounce box of angel hair pasta

1 to 1 1/2 cups grated parmesan cheese

Preheat oven to 325 degrees F. Butter a 9-by-13-inch baking pan. In a bowl, mix together the sliced mushrooms, sour cream, cream of chicken soup, dry sherry, dried thyme, salt, pepper, pimentos, green pepper, chicken breasts, and the cooked angel hair pasta. Combine and spread into baking pan. Top casserole with parmesan cheese. Sprinkle paprika over top. Bake uncovered in oven for one hour until bubbly.
