Ethereal Confections in Woodstock plans move to former Elks Lodge building

Larger space will allow for more production, incubator kitchen, speak-easy-style bar

WOODSTOCK – Ethereal Confections is preparing to more than double its space by the summer.

Woodstock’s specialty “bean to bar” chocolate shop, cafe and bar plans to move into the former Elks Lodge, 140 Cass St., on the west side of the Woodstock Square. The 10,000-square-foot building will allow for increased production capabilities, an event space, incubator kitchen and speak-easy-style bar in the basement.

Mary Ervin, Michael Ervin and Sara Miller have been scouting locations for the planned expansion for about two years, but they hadn’t been able to find a space that was right until recently.

“Initially, we were looking to find a second location where we could just do production in town,” Miller said. “But none of the buildings really worked. They needed a lot of work. It was a lot of old manufacturing warehouses.”

In the past year, the Elks Lodge building has been renovated, and Ethereal Confections will lease the space for its new cafe, bar and chocolate shop. This will be the shop’s second relocation.

The business began selling products at the Woodstock Farmer’s Market and later moved into a 400-square-foot storefront on Main Street before moving to its current location at 113 S. Benton St.

The owners said they know their customers appreciate the current aesthetic, which will remain intact despite the relocation.

“Everyone is concerned the new place won’t be as charming,” Mary Ervin said. “But it will be.”

The owners now are in the process of picking out furniture, designing signage and working on a layout for the new space. They also will design a different menu for the smaller downstairs bar.

“It will be a Prohibition-style cocktail bar,” Mary Ervin said. “You’ll have to have a password to get in. There will probably be more limited availability in terms of hours. There will be a different selection of cocktails.”

A firm opening date has not yet been set, and there are no plans to shut down the current shop for an extended period of time for the move.

The owners hope to move in the summer.
